    Head of Operations appointed at Swansea restaurant group

    The family-owned group behind one of Swansea’s oldest restaurants has appointed a Head of Operations to oversee the ongoing evolution of their four venues in the city.

    Darren Cox will take the role at the group which owns the iconic La Braseria restaurant and La Prensa tapas and cocktail bar on Wind Street and the popular La Parrilla restaurants in SA1 and Mumbles. Swansea born Mr Cox has returned to his hometown following 25 years’ experience in senior hospitality and customer service positions in the UK and overseas. He was most recently part of the management team at Bistrot Pierre.

    Mr Cox will oversee the ongoing running of the four venues as well as the implementation of a new strategy to solidify and evolve the offer across the four.

    Mr Cox said of his appointment: “La Braseria, and the Tercero family who own it, have built up an incredible heritage in Swansea over the last 30 years. The late Manuel Tercero’s food legacy is one of fuss-free Spanish dishes using the best quality ingredients available.

    “I look forward to working with his son, Daniel, in carrying on this ethos at La Braseria, La Prensa and the two La Parrilla restaurants, whilst also evolving and striving to meet the needs and expectations of all our customers, old and new.”

    Authentic Spanish restaurant, La Braseria was founded in 1986, with tapas and cocktail bar, La Prensa, opening next door in 2002. The more contemporary, waterside La Parrilla SA1 opened in 2006. The newest venue in the group portfolio, La Parrilla Mumbles, is a rooftop bar and restaurant situated in the popular Oyster Wharf development and boasts the only outdoor rooftop terrace on Swansea Bay.

    Group owner, Daniel Tercero, said: “We’re delighted to welcome Darren to our family of restaurants. He brings a wealth of experience in hospitality management and I am confident that his passion for and knowledge of the sector and excellent customer service will benefit our operation greatly.

    “We’ve been looking closely at how we can enhance and evolve our offer across the four venues and Darren joins us at an important time as we start to initiate changes across our portfolio. I am looking forward to working with and supporting him as he puts his vision for each of our four unique dining experiences into practice.”
